Recipes from me!

We have been having an awesome salad at work…everyone seems to like it. It’s kind of an Anti-Pesto / Italian style salad.

  • 2 Cup Romaine (cut in cubes )
  • 1/4 Cup Grape Tomatoes ( halved)
  • 1/3 Cup Black Olives (halved)
  • 1/3 Cup Pepperoncini Peppers (halved, no stem)
  • 1/4 Cup Red Onions (sliced thin ,about 1 inch long pieces)
  • 1/4 Cup Pepper Jack Cheese (cubed)
  • 1/4 Cup Mozzarella or Swiss Cheese (cubed)
  • Croutons , garlic flavored ( I use homemade)
  • Italian Vinaigrette Dressing (I use homemade)
  • Hard Salami (cut in pieces)
  • Pepperoni (cut in pieces)

Salad Dressing:

  • 1/4 Cup Olive or Avocado Oil
  • 1/4 Cup of Vinegar (I use Rice Wine Vinegar)
  • 1 tsp dry Basil
  • 1 tsp dry Oregano
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt ( I only use McCormick California Style)
  • 1/4 tsp Black Pepper
  • 1/2 tsp Spicy Mustard

Mix and store at room temperature.

Garlic Croutons:

  • 1/2 Loaf Bakery French Bread (cubed)
  • 1/4 Cup Olive Oil
  • 1 tsp Garlic Salt (California Style)
  • 1 tsp dry Parsley (crushed to a fine powder)

Mix all in a baggie or bowl and put on a cookie sheet and bake till golden and crisp. About 10 minutes on 350.

Apple, Beet and Roasted Chicken Salad

  • 1Cup Romaine Lettuce chopped
  • 1/4 Cup Apples, Julienned
  • 1/4 Cup Raw Beets, Shredded
  • 1 Pickled Beet Eggs , Sliced
  • 1/2 Cup Roasted Chicken Breast
  • Poppy Seed Dressing, (I use homemade)

Poppy Seed Dressing

  • 1/4 Cup Avocado Oil
  • 1Tbp Apple Cider Vinegar
  • 1Tbp Creamy White Mustard
  • 2Tbp Honey
  • 1/2 Tsp Poppy Seeds

Banh Mi Street Taco

Taco Meat

  • Chicken Thighs diced ( I did about 4 thighs)
  • 1 Lime for juice
  • 1/2 Jalapeno diced small
  • 2 Cloves Garlic diced small
  • Coconut Oil (for sauting)
  • 1/4 C. Sugar ( I used 2 Tbp. Homemade Jalapeno Jelly instead)

Saute Chicken till almost done ,then add remaining ingredients and finish cooking.

Taco Filling

 

  • Wrap Shells of your choice20160726_053038
  • 1 Lg Carrot shaved in strips
  • 4 Radishes sliced thin
  • 1 Jalapeno sliced thin( with seeds in)
  • 1 C. Romaine sliced in strips
  • 1/2 C.Kale sliced in strips
  • 1/2 C. Cilantro chopped
  • 1 Sm. Beet shredded
  • 1 Green Pepper sliced thin
  • 1 Sm. Red Onion sliced thin
  • 1 Avocado sliced thin
  • 1/2 C. Red Cabbage thin shred
  • 1 Stalk Celery sliced thin

Add In Options

  • Pickled Beet Boiled Egg sliced thinwp-image-255782880jpg.jpg
  • 1/2 C. Pickled Beet cubes

Beet Cream Sauce

  • 1/2 C. Greek Yogurt
  • 1/2 Avocado
  • 1/4 C. Pickled Beet cubes
  • 1 Pickled beet Egg
  • Squeeze of lime juice

Blend all till smooth and creamy.

Wasabi Cream Sauce

  • 1/2 C. Greek Yogurt
  • 1/2 Avocado
  • 2 Tbp. Wasabi paste or saucewp-image-237664739jpg.jpg
  • Sea Salt an Lime Juice  (to taste)

Blend all till smooth and creamy.

Here is the recipe for the Shrimp Taco I made today for lunch.

Sweet Heat Shrimp Tacos

Taco Filling:(4 Tacos)

  • 1/2 C. Romaine Lettuce chopped
  • 1/4C. Cilantro chopped
  • 1/4C. Spinach chopped
  • 1/4C. Green Onions sliced (about 1/2 inch pieces)
  • 1/4 C. Red Cabbage sliced thin
  • 1/4 of a Pear sliced thin
  • 1/2 of a Jalapeno sliced thin
  • 1/2 lb. Shrimp,no tail
  • 1/2 of an Avocado sliced thin

Taco Sauce:

  • 1 TSP Garlic minced
  • 1/2 TSP Ginger minced
  • 4 TBP Honey
  • 2 TBP Soy Sauce
  • 1 TSP Red Pepper Flakes

Directions:

Saute the Shrimp just till a little color is on them then add all the sauce ingredients to thr pan and saute till it gets a little sticky. Seperate the shrimp from the sauce and reserve the pan sauce to use over the taco.

Add all the filling to your shell and drizzle with the pan sauce!

Cheeseburger Pasta Bake

  • 1 lb. Ground Beef cooked and drained
  • 2 C. Pasta of Choice
  • 1 small Onion chopped
  • 1/2 C. Tomatoes diced
  • 1 6oz. can Tomato Paste
  • 1 Tsp Paprika
  • 1 Tsp Parsley
  • 1 Tsp Garlic Pdr
  • 1 Tsp Onion Pdr
  • 1 Tsp of Beef Bullion
  • Salt and Pepper to taste
  • 1 C. Milk
  • 1 C. Pasta water
  • 1/2 C. Heavy Cream
  • 2 C. Shredded Cheddar Cheese

Boil the pasta till almost done, drain and set aside. Cook the ground beef ,drain and add diced tomatoes, onions all the spices, and the pasta water. Cook till all combined and hot. Add the milk and cream bring to a boil. Turn of the heat and add the pasta and 1 1/2 C. of cheese. Stir till melted. Transfer to a baking dish ,top with remaining cheese and bake at 350 for 40 minutes. Let set and cool for 15 minutes(allows the liquids to absorb and firm up the dish.)

BUFFALO CHICKEN WRAP

The wrap salad:

  • 1C Romaine cut in strips
  • 1/2 C Kale cut in strips
  • 1 Lg Carrot cut in thin long ribbons
  • 1Celery stalk sliced thin
  • 2 Green Onions chopped
  • 1/2 Avocado sliced

The Chicken:

  • 2 Breast boiled and diced
  • 2 Tbp Buffalo Sauce

I drain the water and add 1Tbp Olive Oil and saute .Season with a little Season Salt.Add the Buffalo Sauce and cook till well coated and browns slightly.

The Sauce:

  • 1/2C Greek Yogurt
  • 2Tbp Buffalo Sauce

Mix together and drizzle over the wrap when preparing.

I use homemade Cream Cheese and spread it on the wrap then add all the other ingredients!

Makes 3-4 Wraps. And they are delicious!

Egg Bake…

This bake has 

  • Fresh Mushrooms sliced
  • Cherry tomatoes halved
  • Green Onions sliced
  • Black Olives sliced
  • 3 Eggs
  • 1/2 C Mozzarella shredded

Put it all in a preheated skillet and bake in the oven on 400 for 20 minutes. And always salt and pepper to taste!
